I checked Etsy again and there are a few people selling wooden keycaps, including whole sets.
By the few that have pictures showing the reverse of the keycap, it looks like a plastic stem is simply glued to the wood, probably with some kind of epoxy.

I have seen a few on Etsy, but usually as one novelty key, not a whole keyset.
It would not be a thing for me, but that's just my personal taste. There could be many people who would buy them.

I had to look down to check, it seems I in type mostly with my two middle fingers for all keys and the right pinky for SHIFT and ENTER.

Keyboards are kind of the exception there. A good quality 20-yeard-old mechanical keyboard can still be used today. I guess that's part of the charm. It's not an easy question. I have been into computers in general for a very long time. I love all kinds of hardare, old and new. But most hardware doesn't have a very long useful life. That's an archeologic project there. I think the plastic part are the only thing that can be salvaged. At least the keycaps. But all that was metal there is beyond restoration.

There are kits that allow you to convert an old mouse to optical usb one.
Here is a video on how to convert an old Apple mouse, but I guess with a little work it could be used on different old models.
