One quick question: should I get the ErgoDox or rather the Kinesis Advantage? I guess the main advantage of Kinesis is the ergonomic case, with the 'wells' for both hands. On the other hand, both ErgoDox halves can be aligned freely with any distance between them, but the halves themselves are flat....

xbindkeys is not needed if the only thing you want to achieve is getting the eurosign. You should edit xorg.conf (as I have written above) or use setxkbmap if you want a runtime solution.
