The funny thing is, I found them some weeks ago in a small shop, but neither remember the name of the shop, nor how they were called, was ist "blind plate"?, "cover blanks"?, something like that ...

For what I see these flat keycaps aren't really flat. They are flat in comparision to other keycaps, but not as flat as beeing on level with the keyboard frame. That is what I'm looking for.

which however are not flat. They are in fact exactly the same height as a MID keycap without its cover.

Are you sure? On the pic I've posted the top of the flats reaches not beyond the bottom rim of the normal keycaps. On your pic they do, that means I would guess both are of different profile.

PI used to sell them on their website, but apparently now you need to call them to get them: http://xkeys.com/accessories/Keycaps.php (towards the bottom). They push the stem in, and latch on to the switch sides.
